All sugars are NOT equal

Recent media attention has focused on removing added sugar from manufactured foods to reduce obesity. The main target is sugary drinks, but bread has also come under attack.

Bread is not normally made with sugar. “Sugars” appear on the label, but these are at a low level, naturally present, and mainly in the form of maltose, which is produced as bread ferments.

It is worth remembering that bread contains more than twice as much protein as it does sugars and also provides 10-20% of our daily fibre, calcium, iron, thiamine and other vitamins and minerals.
