Method

Step 1

In a large mixing bowl, combine the flour, salt, egg yolk and milk to form a smooth paste

Step 2

In a separate bowl, whisk the egg white until stiff

Step 3

Fold the egg white into the batter until no lumps remain

Step 4

Heat a non-stick pan over a medium heat, and coat lightly with a little olive oil

Step 5

Drop 1 tbsp amounts of the batter into the pan and leave to cook until bubbles start to appear on the surface (approx 1 minute), then flip the blinis to brown them slightly on the opposite side (about 30 secs)

Step 6

Remove from the pan and leave to one side while you repeat step 5 until all the batter has been used up

Step 7

Arrange your blinis on a serving platter and top with either: - a dollop of cream cheese, followed by smoked salmon or trout and a sprinkling of fresh dill OR - thin slices of pickled beetroot, followed by sliced or crumbled goats’ cheese, drizzled with honey and sprinkled with freshly chopped chives
