Place the prepared fish on a buttered grilling tray and brush the fish all over with garlic butter. Season with salt and ground pepper.
Grill on both sides, dark side first, for 7 - 8 minutes.
Meanwhile place the breadcrumbs, parsley, dill, lime juice and lime zest in a bowl.
Pour in the melted butter and mix in well. Sprinkle over the top of the fish and cook for 3 - 4 minutes until lightly browned. Serve with a lime twist.
