Spicy bean and grilled vegetable wraps

These healthy wraps can be prepared in minutes and look and taste great. A perfect light lunch time snack for unexpected guests. They also make great picnic food or a wonderful accompaniment to barbecued meats.

Method

Step 1

Drain the beans well and mix in a food processor with the soured cream until smooth. Add the coriander and season with salt and pepper.

Step 2

Cut each pepper into 6 pieces, remove the stems and seeds; finely slice the onion. Place pepper and onion in a grill pan and drizzle with olive oil.

Step 3

Place under a hot grill until the peppers are starting to char. Slice the peppers into thinly sliced pieces.

Step 4

Cut the tortillas in half and spread with the bean mixture, followed by the grilled vegetables. Roll up and place on a serving dish. Garnish each wrap with a small piece of coriander.
